Storing wine requires more than a cool basement. To age properly, wine must be kept at a low, consistent temperature and within a specific humidity range. Experts recommend keeping cellars at around 50 °F; if you want to maintain 50 °F in your cellar, the adjacent room where the cooling unit exhausts should stay below 100 °F. A quality cooling system should also handle temperature differences of up to 55 °F between the cellar and the exhaust space.
